I would expect the Su/Mo class to be smaller; there will be people who, with an hour of instruction on Fr/Sa feel completely confident that they can take it from there, and people who having learnt it turn around and say, 'Man, that is so not a craft for me.' I was thinking, though, that what I've learned in the past has usually stuck better after a class and a follow up. Some people won't, and will feel they got enough out of the first half. Also, my thought was that if crafters can get a day or so to maybe give things a try, they can maybe get another hour or two of work done on the project, so that they'll get the 'benefit' of more hours for them to try the new craft, without us needing to provide physical space for it.
Practically, it also avoids big blocks of time committed to the classes, and breaks up classes that do merit a little more time into bite size standard chunks. It does require the instructor to be available twice, but it can count as two panels to entice them for that. And indeed, some of them might prefer that, since 2 hours is a big chunk of time to be teaching 25 novices to knit fair isle. :-)
