I could come by during the daytime, some time between 11:00 am and 
7:00 pm. I'm willing to put in about 3 hours.

  I have a little experience with this; my house was flooded about 10 
years ago.  If there are important papers that we want to preserve, 
that are wet, one way of dealing with them is to freeze them until 
they can be properly dried.  Properly drying them is sufficient 
hassle that only really important papers should be bothered with.
